What the Heck is a Spatchcock?!
We aren't sure who invented that crazy word, but a quick google search revealed that it first turned up in 18th Century Irish cookbooks.
Anywho....the term basically means butterflied or flattened!
By cutting away the backbone you can open your whole chicken (or turkey, quail, etc) and lay it flat for cooking.
WHY? Because your chicken will cook faster, the skin will crisp up better and you are less likely to dry it out!
It's a great way to cook a chicken on the grill, but we have also oven roasted ours.
Supplies Needed:
1 pair of garden pruners (spring for a new pair and dedicate them to this task!)
1 pair of kitchen scissors
1 whole roasting chicken of any size
Oil, herbs and spices
